Amasake Fruit Pudding

Ingredients

  • 1 quart plain amasake

  • 1 cup tangerines, skin and seeds removed and sliced

  • 4 to 5 tsps kuzu, diluted in 8 Tbsps cool water

Steps

  1. Place the amasake and tangerines in a saucepan. Bring to a boil, and reduce the flame to low.

  2. Slowly add the kuzu, stirring constantly, until the pudding becomes thick. Simmer 2 to 3 minutes.

  3. Place in individual dessert cups and serve hot or chilled.


NOTES:

  • Other local seasonal fruits such as apples, pears, nectarines, peaches, and berries can be substituted for tangerines.
