Azuki Beans with Chestnut and Raisins

Ingredients

  • 1 strip kombu, 6 to 8-inches long, soaked, sliced in 1-inch squares

  • 1 cup dried chestnuts, washed, dry-roasted for 5 to 7 minutes, and then soaked about 10 to 15 minutes

  • 1/2 to 3/4 cup raisins

  • 1 cup azuki beans, soaked 6 to 8 hours

  • 1/8 to 1/4 teaspoon sea salt water

Steps

  1. Place kombu in a pot. Add chestnuts, raisins, and azuki beans. Add just enough water to cover beans. Bring to a boil. Cover and reduce flame to medium-low. Simmer about 2 to 2-1/2 hours. If necessary during this time, add water in small amounts only to just cover beans.

  2. After 2 to 2-1/2 hours, season with a little sea salt. Continue to cook beans until most of the remaining liquid has cooked away.

  3. Place in individual serving dishes and serve.
