Baked Brown Rice with Almonds

Ingredients
1 cup brown rice
1/4 cup almonds, blanched and skin removed
2 cups boiling water
1 medium onion, diced
1-2 stalks celery, diced
pinch of sea salt
Steps
Wash the rice, rinse and drain. Dry-roast the rice until golden brown.
Remove and place in a casserole or baking dish. Mix in the blanched almonds, onions and celery. Pour the boiling water over the rice and vegetables
Cover and bake at 350°F for about 1-1/4 to 1-1/2 hours.
