Ingredients

  • 1 cup barley, washed and soaked overnight

  • 1 1/2 - 2 cups water

  • pinch of salt

  • 1/4 tsp gamashio

Steps

  1. Place barley with soaking water and the salt in a pressure-cooker. Cover. Bring to pressure on high flame.

  2. Reduce flame to medium-low, place a flame deflector under the cooker, and cook for 50 min.

  3. Allow pressure to comedown, remove cover, and place barley in a wooden bowl.

  4. Serve.

  5. Garnish with gamashio.
