Barley (Нato Mugi) Stew
An excellent dish for colder days, full of nutrients. Hato mugi (Job's Tear or Pearl Barley) provides many benefits, including skin beautification.

Ingredients
1/4 cup hato mugi, washed
3 shiitake, rinsed and soaked until soft, thinly sliced (save soaking water)
1/4 cup onion, diced
1/2 cup diced leek with the root
1/4 cup celery, diced
1/4 cup carrot, diced
1/4 cup burdock, diced
1/4 cup sweet corn, sliced off cob
1/4 cup dry tofu, sliced
1/2 tsp sea salt
1 1/2 cups water, including soaking water
2 tbsp sliced scallions or parsley for garnish
Steps
Layer shiitake, onion, leek, celery, carrot, burdock and dry tofu in that order in a soup pot.
Add hato mugi, soaking water and remaining water, sprinkle with sea salt if using, cover and bring to boil.
Lower heat and simmer for 25 minutes adding more water if a thinner stew is desired.
Place fresh corn and simmer for 5-10 minutes. Stir gently and serve with garnish.
