Cauliflower Soup

Ingredients
4-5 cups water or vegetable broth
2 inches wakame, soaked and cut into small pieces
2 tbsp olive oil
1 onion roughly chopped
½ tsp sea salt
2 cloves garlic chopped
1 head cauliflower chopped
2 cups oat milk (optional)
2 tbsp scallion, parsley, chive, or leek finely chopped
Steps
In a large pot, add the water, cauliflower, onion, wakame, and salt.
Bring to boil and simmer approximately 10 minutes.
Using a blender puree the soup until it is smooth and creamy.
If adding the milk, transfer soup back to the pot, add the milk and cook over a medium-low heat until hot.
Turn the flame off and ladle the soup in to bowl.
Sprinkle with greens.
Serve with tortilla chips, 3 per serving.
