Cool Cucumber Soup with Dulse

Ingredients

  • 2 cups cucumbers, peeled and seeded

  • 4 cups water

  • 1/4 to 1/2 teaspoon sea salt

  • 2 Tbsp dry dulse

Steps

  1. Place cucumber, water and salt in a pan and bring to boil; reduce heat and simmer for 5 to 7 minutes.

  2. Put soup through a hand food mill or blender. Puree and let cool to room temperature.

  3. Rinse dulse and soak for 2 minutes. Remove from water and squeeze to release water; cut finely.

  4. Serve cucumber soup in bowls garnished with a few sprinkles of dulse.
