Daikon and Carrots Pressed Salad

Ingredients

  • 1 cup carrots, sliced into very thin match sticks

  • 1 cup daikon, sliced into very thin match sticks

  • 1/4 teaspoon sea salt

  • 2 tbsps brown rice vinegar

Steps

  1. Thoroughly mix the vegetables, sea salt, and vinegar in a pickle press. 

  2. Allow the vegetables to press for 1 to 2 hours.

  3. Remove and squeeze out any excess liquid. If too salty for your taste, rinse quickly under cold water. 

  4. Place in a serving dish.
