Daikon and Orange Salad

Ingredients
2 cups daikon, cut into very thin match sticks or small chunks
1 teaspoon sea salt
1 small organic orange/juiced, reserve rind
a few sprigs of fresh parsley
Steps
Place daikon and sea salt in a bowl and press with your hands.
Then place daikon into a salad press. Apply pressure of lid and let press for 30 minutes.
Discard water from the vegetables. Rinse salt off vegetables twice.
Place daikon in a bowl and pour orange juice on top as a dressing. Mix gently. Garnish with slender slices of orange rind and parsley.
