Dried Daikon-Shiitake Tea

Ingredients

  • 1/2 cup dried daikon

  • 1 shiitake mushroom, soaked (save soaking water), then sliced 

  • 2-1/2 cups cold water (including shiitake soaking water)

Steps

  1. Add dried daikon, shiitake and water to a saucepan and bring to a gentle boil. Cover then lower the flame. Simmer 15 to 30 minutes then strain out the vegetables.

  2. Drink this broth while hot, warm, or at room temperature (you may add the leftover dried daikon and shiitake mushroom to other vegetable dishes).
