Fu and Vegetable Stir-Fry

Ingredients
5 to 6 rounds of whole wheat fu or flat fu, soaked 10 minutes, liquid squeezed out and sliced in bite-sized chunks
1 cup onion, sliced in half-moons
5 fresh shiitake mushrooms, sliced
1 cup carrot, sliced in thin diagonals
1 1/2 cup green string beans, sliced in half
sesame oil
shoyu or tamari soy sauce, to taste
Steps
Heat a small amount of oil in a skillet.
Saute the onion for 1 to 2 minutes.
Add the shiitake and saute another 2 to 3 minutes.
Add the carrot, green beans, and fu. Saute until the carrot is almost done, stirring occasionally.
Add several drops of shoyu for a slightly salty flavor and cook another 4 to 5 minutes.
Place in a serving bowl.
Use variety of vegetables.
