Lentil Soup

Ingredients

  • 1 cup green lentil

  • 1 cup onions, diced

  • 1 cup carrots, diced

  • 1/2 cup celery, diced

  • 1/4 cup burdock, diced

  • 4-5 cups water

  • 2 Tbsps chopped parsley or scallions

  • sea salt to taste

Steps

  1.  Wash lentils.

  2. Placed the onions, carrots, celery, and burdock in a pot.

  3. Place lentils on top of vegetables, add water, and bring it to boil.

  4. Reduce flame to medium-low and cover the pot.

  5. Simmer approximately 30 min.

  6. Add salt to taste and simmer another 10-15 min.

  7. Add chopped parsley before serving.
