Lentil Vegetable Stew

Ingredients

  • 4 to 5 cups water

  • 1 cup lentils, washed

  • 1/2 cup onion, diced

  • 1/2 cup carrot, diced

  • 1/4 cup celery, diced

  • 1/4 cup burdock, diced

  • 1 bay leaf (optional)

  • 2 Tbsps parsley, minced

  • 1/4 to 1/2 teaspoon sea salt

Steps

  1. Place the lentils, onion, carrot, celery, burdock, bay leaf, and water in a pot. Cover and bring to a boil. Reduce the flame to medium-low and simmer for 50 minutes.

  2. Add the sea salt and simmer another 10 minutes or so.

  3. Add the parsley and simmer 1 to 2 minutes. Place in serving bowls.
