Melon Pudding

Ingredients
1 ripe melon
1 pinch of sea salt
juice of 1/2 lemon
kuzu (2 teaspoons per cup), diluted or whole wheat pastry flour
Steps
Scoop seeds out of the melon. Peel melon and place in a sauce pan with sea salt and a little water; cook until melon is soft (10 to 15 minutes).
Blend melon or put through a hand food mill.
Put the pureed melon back into a sauce pan. Add the lemon juice and diluted kuzu. Cook until thick.
Cool and serve.
