Melon Pudding

Ingredients

  • 1 ripe melon

  • 1 pinch of sea salt

  • juice of 1/2 lemon

  • kuzu (2 teaspoons per cup), diluted or whole wheat pastry flour

Steps

  1. Scoop seeds out of the melon. Peel melon and place in a sauce pan with sea salt and a little water; cook until melon is soft (10 to 15 minutes).

  2. Blend melon or put through a hand food mill.

  3. Put the pureed melon back into a sauce pan. Add the lemon juice and diluted kuzu. Cook until thick. 

  4. Cool and serve.
