Millet and Sweet Vegetable Soup

Ingredients
1 cup millet, washed
1 cup onion, diced
1/2 cup buttercup squash, cubed
1/4 cup celery, diced
1/4 cup carrot, diced
1/2 cup cabbage, diced
1 strip kombu, 2 inches long, soaked and diced
5 to 6 cups water
1/4 to 1/2 tsp sea salt
parsley, finely chopped, for garnish
1/2 sheet toasted nori, cut in strips, for garnish
Steps
Place the kombu in the pot and layer the vegetables and millet on top in the following order: onion, celery, cabbage, squash, carrot, and millet.
Add water, cover, and bring to a boil. Reduce the flame to medium-low and simmer for 30 minutes.
Season with sea salt and simmer another 10 minutes.
Place in serving bowls and garnish with parsley and nori strips.
