Millet and Sweet Vegetable Soup

Ingredients

  • 1 cup millet, washed

  • 1 cup onion, diced

  • 1/2 cup buttercup squash, cubed

  • 1/4 cup celery, diced

  • 1/4 cup carrot, diced

  • 1/2 cup cabbage, diced

  • 1 strip kombu, 2 inches long, soaked and diced

  • 5 to 6 cups water

  • 1/4 to 1/2 tsp sea salt

  • parsley, finely chopped, for garnish

  • 1/2 sheet toasted nori, cut in strips, for garnish

Steps

  1. Place the kombu in the pot and layer the vegetables and millet on top in the following order: onion, celery, cabbage, squash, carrot, and millet.

  2. Add water, cover, and bring to a boil. Reduce the flame to medium-low and simmer for 30 minutes.

  3. Season with sea salt and simmer another 10 minutes.

  4. Place in serving bowls and garnish with parsley and nori strips.
