Miso Soup, Basic
Simple and authentic miso soup.

Ingredients
4-5 cups of water
1 cup of onion, sliced in thin half-moons
1-2 inches of wakame, washed, soaked, and sliced (discard soaking water)
4 tsp of barley miso
2 tbsp of scallion, parsley, or chives, finely chopped, for garnish
Steps
Place the water, onion, and wakame in a pot. Cover, place over high flame and bring to boil.
Reduce the flame to medium-low and simmer for 3 to 5 minutes.
Reduce the flame to very low and wait for the water to stop boiling.
Place miso in a cup or bowl, add a few spoons of broth and dilute it.
Stir the diluted miso into the pot of soup. Cover and simmer for 2 to 3 minutes.
Place in the serving bowls and garnish with chopped greens.
