Mochi Waffles with Lemon-Walnut Syrup

Ingredients

  • 1 pound mochi

  • 1/2 cup brown rice syrup

  • 2-3 tbsp water

  • 1/4 cup walnuts, roasted and finely chopped

  • 2-3 tsp lemon juice, to taste

Steps

  1. Slice the mochi into quarters, about 3 1/2 inch by 2 1/2 inch by 1/4 inch thick. Place 1 piece of mochi in each section of a dry (do not oil) waffle iron. Cook until puffed up and slightly crispy but not hard and dry. Repeat until all mochi has been cooked. Place on a serving platter. 

  2. To prepare the topping, place the rice syrup in a saucepan with the water, roasted walnuts, and a little freshly squeezed lemon juice. Place over a medium flame. When the syrup is hot, pour over each waffle.

  3. Serve.


Another method to make mochi.

  1. Warm a skillet and add a few drops of olive oil. Add the mochi and fry on one side for about 3 minutes. Use a low flame.

  2. Turn the mochi over and continue to fry for another 3 minutes. The mochi will puff up in the middle and be crispy on the outside.

  3. Remove and place on a serving dish.
