Soft Rice (Kayu) with Sweet Vegetables

Ingredients

  • 1 cup organic brown rice, washed

  • 5 cups water

  • 1 cup Hokkaido or butternut squash, cubed

  • 1/2 cup carrot, cubed

  • 1/2 cup cabbage, cubed

  • pinch of sea salt or 1-inch piece of kombu, soaked and diced

Steps

  1. Place all ingredients in a pressure cooker, cover, and bring up to pressure. Reduce the flame to medium-low and simmer for 45 to 50 minutes. Remove from flame and allow the pressure to come down.

  2. Remove cover and place in serving bowls. Garnish and serve.
