Soft Rice (Kayu) with Sweet Vegetables

Ingredients
1 cup organic brown rice, washed
5 cups water
1 cup Hokkaido or butternut squash, cubed
1/2 cup carrot, cubed
1/2 cup cabbage, cubed
pinch of sea salt or 1-inch piece of kombu, soaked and diced
Steps
Place all ingredients in a pressure cooker, cover, and bring up to pressure. Reduce the flame to medium-low and simmer for 45 to 50 minutes. Remove from flame and allow the pressure to come down.
Remove cover and place in serving bowls. Garnish and serve.
