Sweet and Sour Seitan

Ingredients

  • 2 cups cooked seitan, sliced

  • 1 cup burdock (or other seasonal root vegetable) sliced in chunks

  • 1 cup apple juice

  • 3 cups seitan-shoyu cooking water (if available) if not available, use 2-3/4 cups water and 1/4 cup shoyu

  • 3 to 4 Tbsps kuzu, diluted in 3 to 4 Tbsps water 

  • small amount of brown rice vinegar 

  • 1/4 cup chopped scallions or parsley

Steps

  1. Place seitan, burdock, apple juice, and seitan-shoyu cooking water in a pot. Bring to a boil. Cover and reduce flame to medium-low. Simmer 5 to 7 minutes, until burdock is soft.

  2. Reduce flame to low and add diluted kuzu and a small amount of brown rice vinegar. Simmer 2 to 3 minutes.

  3. When done, place in a serving bowl and mix in chopped scallion. 

  4. Serve hot.


Optional:

  • Add barley malt as a substitute for the apple juice.

  • Use seitan starch water as a base and thickener for this dish.

  • Use red peppers for color.
