Umeboshi-Pumpkin Seed Dressing

Ingredients
1 umeboshi plum or 1 Tbsp umeboshi vinegar
1/4 cup pumpkin seeds
spring water
1/8 cup chopped parsley, scallions, or chives
Steps
Sort, wash, and dry roast hulled (green) pumpkin seeds in a skillet.
Grind to a paste in a suribachi.
Remove the pit from an umeboshi plum, finely chop the plum, and grind to a paste with seeds in the suribachi. Or grind the seeds and add the vinegar.
Add water to obtain desired consistency.
Add parsley and serve.
If using a coffee grinder, grind the roasted pumpkin seed to a coarse texture. Put it in a bowl, add umeboshi vinigar and water. Mix well. Add greens and serve.
